T’is the Season to be generous, grateful and sharing. I LOVE making these gluten-free paleo granola bars. They are packed with antioxidants, good fat and protein. One of my favorite things to “gift” is food. Who doesn’t like food?
Try making these granola bars and either bringing them to a holiday party as a healthy “treat” or gifting them. The red goji berries and dried cranberries make them look pretty too.
GLUTEN-FREE PALEO FRUIT & NUT GRANOLA BARS
Paleo and Vegan friendly
1/3 cup almond meal flour (or brown rice flour)
1 ½ cup almonds (or pumpkin seeds)
1 cup walnuts (or sunflower seeds)
½ cup goji berries
1/2 cup dried cranberries
¾ teaspoon cinnamon
½ tablespoon honey or 1 drop of stevia
4 tablespoon water
1) Place almonds, walnuts, almond meal flour, goji berries, cranberries, cinnamon in food processor & process until combined.
2) Add water & honey.
3) Remove from food processor & spread onto an 8×8 pan & refrigerate for at least 2 hours. Cover with wax paper or store in a glass container with lid.
Goji Berries – These red berries are not only a source of complete protein with 18 amino acids, and all 8 essential amino acids, but have 500 times more vitamin C per ounce than oranges. You can add these to trail mix, smoothies, soups and salads, or you can eat them alone. Cut them in a small square size and plate. Enjoy!
