Summer time is a great time to eat raw. I truly love eating raw food during the Summer. Not only am I eating food that is “alive” but I can actually feel the difference in my mind and body. Beat the heat this Summer by making a raw soup.
Eating raw is full of flavor, enzymes, antioxidants, and provides cellular rejuvenation.
Try making this amazing raw carrot ginger soup. You will be able to keep it in your fridge for three days or freeze it. You can use ginger essential oil if you are not interested in juicing fresh ginger. However, I opt for the real stuff.
Raw Carrot Ginger Soup
1/4 cup fresh ginger juice
1/4 cup dark amber pure maple syrup
1/4 cup lime juice (2 limes)
1/4 cup coconut aminos
2-3 cloves garlic, peeled
1 1/2 cup thai coconut meat (or dry shredded coconut)
¼ tsp himilayan sea salt
Tip: Top off with hemp seeds for extra protein
Blend until smooth. Enjoy at room temperature or warm gently in the blender! Remember, consider what you are absorbing. Please let me know how you like it!
