Gluten Free Barbecue Sauce

Gluten Free Sauce

Happy Father’s Day to all the proud dad’s out there! I know I have been SO fortunate to have an amazing Father and Husband in my life. I’d like to share with you one of my husband’s favorite grilling recipes and his favorite gluten-free beer.

 

Let’s start with the good stuff! For all the foodies out there this recipe is a must when you are grilling. We were introduced to this recipe while visiting Melbourne, Australia where it is ALL about grilling on the barbie!

 

FRESH TUNA BURGERS W/MANGO SALSA

 

Gluten Free Sauce

FRESH TUNA PATTIES

  • 2 teaspoons olive oil
  • 2 green onions, finely chopped
  • 1 tablespoon finely chopped fresh ginger
  • 1 clove garlic, finely chopped
  • 500 g fresh tuna, cut into large pieces
  • 1/2 cup/80 g chopped unsalted macadamia nuts, roasted
  • 1/2 cup/30 g breadcrumbs, made from stale bread (gluten-free)
  • 2 tablespoons chopped fresh cilantro
  • 1 egg
  • freshly ground pepper

 

Gluten Free Barbecue Sauce: mix 1 tablespoon of Coconut Aminos (soy sauce alternative) with 1 teaspoon of sesame oil.

 

MANGO SALSA

  • 1/2 fresh mango, diced
  • 1 plum tomato, diced
  • 1/2 english cucumber
  • 1/2 red onion, diced
  • 2 tablespoons chopped fresh cilantro
  • juice of 1 lime or lemon

 

1) Make the sauce and set aside.

2) Salsa: Place mango, tomato, cucumber, onion, cilantro, lime juice in a bowl. Mix to combine. Cover and refrigerate until ready to use.

3) Place oil, green onions, ginger and garlic in a small stir frying pan on low heat. Cook, stirring frequently until soft and fragrant. Remove pan from heat. Cool.

4) Place tuna in a food processor. Process to coarsely mince. Transfer to a bowl. Add nuts, breadcrumbs, cilantro, egg, black pepper to taste and spring onion mixture. Mix to combine and shape into 6 patties. Cover and refrigerate until ready to cook.

5) BBQ the patties until cooked slightly pink.

6) Serve patties on mixed greens or on gluten free foccacia bread. Top with salsa and enjoy!

415 calories per burger.  Alternatively, can be made with salmon or ocean trout.
